Andalucia has a wide diversity of landscapes from rocky mountains to golden beaches and this diversity is reflected in it's cuisine. The best introduction to Andalucian cooking is by means of a tapas bar where tasty morsels can be sampled either seated or standing at the bar, in appetizer size portions. It is difficult to say exactly what tapas are. Tapas are not a particular kind of food; rather, they represent a style of eating and a way of life that are so very Spanish.

The tapas way of life is completely in tune with the Spanish character. To eat tapas-style is to eat by whim, free from rules and schedules. It is meant for those who wish to enjoy life to the fullest and who love to kill time with friends. Since home entertainment is not common in Spain, the thousands of bars and taverns in the country make for logical meeting places.

A Spaniard will rarely visit a tapas bar with the express purpose of eating; he is there to chat with the owner, joke with the waiters, strike up conversations with other patrons, and invariably come upon friends who frequent the same bar. Jokes will fly, debates will rage, and everyone will have a grand time and be much better prepared to confront daily life.

The southern part of Spain, Andalucia, is a parched and arid region who’s land is best suited to grape vines and olive trees. The people of Andalucia tend to be care free, enjoying life with a devil-may-care attitude. The Andalucian cuisine follows suit, food is prepared with the same abandon and simplicity with which people live their lives.
